Ingredients list for theShrimp and Quinoa Bowl with Avocado and Cucumber
- 1/2 pound shrimp, shelled and deveined, rinsed and drained
- 1 cup cooked quinoa
- 1/2 cucumber, diced
- 1/2 avocado, sliced
- 1 tablespoon olive oil
- 1 tablespoon melted unsalted butter
- 2cloves garlic, minced
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1/4 teaspoon salt and fresh cracked pepper
- 1 pinchcayenne pepper
- Chopped parsley, for garnish

Directions
1.To make the shrimp and quinoa: Heat up a skillet, add the olive oil and butter. Add the garlic and saute until slightly browned. Stir in and cook the shrimp on both sides before adding the honey, lime juice, salt, pepper, and cayenne pepper. Cook the shrimp until the honey lime sauce thickens.
2. In a bowl, add cooked quinoa then top with shrimp. Add cucumber and arrange avocado slices on the side. Garnish the shrimp and quinoa bowl with chopped parsley and serve immediately. Enjoy!

Tips for the spicy shrimp and quinoa bowl recipe
- We like to use large shrimp for this recipe. Opt for 16/20 size shrimp at your grocery store. They are juicier and easier to cook.
- Because honey tends to stick to scratched pans, make sure you use a brand new non-stick pan to sautee the shrimp.
- You can remove the shrimp’s tail if you prefer.
- Buy shrimp already deveined, shelled, and cleaned, your dinner prep. will be much faster.

You can keep the shrimp and quinoa in an airtight container for up to 3 days in your refrigerator.
